Þá eru til fjölsykrur, sem leysast ekki upp í vatni, og eru úr þúsundum einsykurs-einingum, sem tengjast saman í langar keðjur. Af þeim eru til margar gerðir, en algengastar eru mjölvi (sterkja) og beðmi (sellulósi), sem eru hvorartveggju byggðar upp af glúkósa.
